LES: Katz’s Deli Celebrates 125th Birthday With Lots Of Pastrami

Katz’s 125th birthday celebration also features a Friday-night Shabbat meal, with local chefs adding their own touches to the deli’s traditional menu items.

Katz’s began prepping pastrami for the event weeks ago. Fifth-generation owner Dell said, “It went into a brine solution of coriander, garlic and onion for three weeks and then it was smoked for 48 to 72 hours,” using a secret mix of smoldering wood chips to create Katz’s signature pastrami flavor.
